I think this is an example of a phenomenon called "Shell-Shocked". It's basically an even more terrifying version of PTSD.

Personally I think the blood provides some much-needed color to those bland uniforms and is a wonderful accent on those white coats. I mean, being covered in other ponies' blood isn't necessarily the greatest, but, tradeoffs, you know?
