This is just awesome! especially like the lighting of the shield showing the shell about to impact it and the sense of movement from the second unicron, making it feel just like a freeze frame just before the inevitable explosion and covering the entire place in dirt and dust.

Do they assign ponies to the front based on coat color or do they dye their coats tan so their pretty pastel colors don't render all attempts at concealment hilariously futile?

Something closer to the latter. Thinking pigment suppression rather than dye though. The practice would be akin to head shaving, and the effect would fade over time.
So shaved manes, shaved and tucked tails (variable), white-tan complextion would be your average soldier around deployment.

I feel like anΒ illusoryΒ spell would likely be too complex for your average
unicorn, the majority of them being average.
Regarding their ability, this particular scene is actually a dangerous exception
to what would be the norm, hence the intervention from the other unicorn.
Under normal circumstances they'd rely on a horn-mounted device that'd allow
even the most magically inept unicorn to create some form of defensive shield.
While some would rely on the device, many others were capable enough to produce
shields, but attempting to do so versus larger/faster projectiles was
dangerous.
It was my mistake to skip the explanation in the description, but byΒ
"unassisted" I meant without the use of a field former/stabilization apparatus.
The second unicorn isn't actually assisting with the shield, but is instead
attempting to guard the other's head from the impending failure of the shield.
Moments after this scene, the round detonates above the shield, and the blast is mostly deflected,
but the force causes the helmet to sever her horn. The assistance fromΒ the other unicorn saves
her from further injury.

I haven't come up with a decent design for the device yet, so far they've all come out as
unmistakably phallic / generally silly looking.

Sometimes the only choice is between several bad options.
I love the drama of this scene, all of the different poses and especially the bright light from the shield being blocked by the falling shell. It is nice to read more about your concept for it.
