On the bottom one there is a line from the top of the ear that curves down to the jaw, is that a reference you use when drawing heads?

Yes. It helps me locate the zygomatic arch and gives me a hint of a side plane
which I combine with the side plane of the forehead. It mostly serves as
a guide line.
