In terms of ranking among the peerage of Feudal society, the royal family was at the very apex of the hierarchical system. So you had a King, or Emperor, followed his vassals. These usually went from Duke, Count, Viscount, Marquis, Baron and Knight in descending order. The royal family, meaning the King, Queen, Prince and Princess were above the nobility, represented by the ranks I previously mentioned.
Now here's where things get muddied... During the Renaissance, particularly in Machiavelli's Il Principe, the title of "Prince" is given to any high enough ranking noble who holds a position of command. For example, a Cardinal is considered a 'Prince of the Church', but so too can the ruler of a Principality, such as Monaco, be considered a Prince without being a member of any royal family. This was specific to certain areas of Europe, particularly in the boot of Italy where the word still carried something of the meaning it had during the Roman Empire of 'Princeps'.

The point is that a prince/princess is a member of the royal family, whereas a noble isn't. So, basically, the avatar is degraded. They could have tried to find a better solution for this...

It did seem weird to me. The other thing that stood out like this was the fact that, even if you choose to side with Hoshido, your character is still a Nohr Prince/Princess, despite the fact that you've more or less renounced your Nohr title altogether.

It basically means that people who owned land, had money and/or power started referring to themselves as "nobility" at some point. There are still noble houses out there today - like the Count of Westfalen, for example. They usually have a family crest and family seat (castle, manor), but they aren't royalty - that would be the ruler of a coutry (usually a king/queen, though there are coutries that were ruled by a prince/princess or an archduke/archduchess). Royal and noble houses usually only married among themselves (royals usually weren't even allowed to marry a noble of low rank, they often had to forfeit their claim to the throne if they chose to regardless) and this, of course, led to the fact that almost all royal/noble houses in Europe are related somehow. They often married (first) cousins to tighten alliances between countries, too. Hope this helps (and wasn't too much, I'm kinda in history teacher mode again ^^)
