In Properties bring up your camera (Create a camera if you don't have one)
Control Click on Display and Camera to highlight both
Click on Depth of Field
Click on Near DOF Plane Visibility. Click on Far DOF Plane Visibility.
Now move the focal distance slider until the white planes stop just in front of the feature you want to be in focus. In this case its the eyes.
If you turn off the Near DOF Plane visibility you can see the rear one . It should be behind the object you want to be in focus.
In my example I've set the focal length of my lens to 200mm. In photography long lenses (more than about 100mm) tend to be good for portraits as they compress features and flatter the subject.
There are a few things that determine the area in focus - fstop is the big one. I've kept it at f22 in this example. If you lower it, the distance between the two DOF planes will decrease and the amount of the field in focus will also decrease.
Thats about it. There can be a lot more to it, however for this example that should do for now and give you decent results
Here you can see the renders with and without DOF - the effect can be subtle but adds a softness and automatically draws the eye to the object in focus. Shout if you've any questions.

You may need to increase the DOF overlay opacity. Mine defaults to 0%. Otherwise, neat trick. More visual than just going to perspective view and observing the DOF plane outlines.

I posted a script a while back to facilitate precisely setting the focal distance of a camera in Studio. Much more accurate than trying to be fiddly about lining up the visibility planes in the viewport. Might be useful to folks wanting to experiment with DoF. Link: goo.gl/J5PHcl

Thanks for the tip, I never noticed the plane visibility switches!
I always adjusted them while looking at the scene from a second camera perspective.
