I posted a script for DAZ Studio a while back to set depth of field focal distance with extreme accuracy.  It can be found at goo.gl/J5PHcl . Using perspective view to adjust the f/Stop to get an estimate of how much in front of and behind will be in focus is still relevant.  But the script makes the actual focal distance exact.

I just RIGHT NOW figured out why sometimes DOF looks nice, and other times (most of the time) I absolutely hate it. Lol.

It's the feet!!!

True, if you are using a flat background DoF isn't so great, there are ways around it, but the simplest fix is to not film the feet and have a slightly upward camera angle

I like when you can see the transition from in and out of focus. It's much more believable than simply a focused character in front of a blurry background with no interaction between them.

DOF is easy-ish to set up, but damn it has overhead on the render time. It can be worth it - I agree it can add a lot.

I've tried with and without DoF, render times are just a little longer. As long as your focus item is good and clear, you can stop the render and fix any noise with Photoshop

I think I was either setting it up wrong or blaming DOF for issues with my old video card.  I've tried a few since - ahem - refreshing my memory of how DOF works, thanks to your tutorial, and the render times haven't been bad at all.
