Why, because that's what the script says! Plus, some ponies need to get their daily sugar dose, and the Cakes are closed too right now.
Also fun fact: The 9th panel came out rather creepy on the first try (a stare that would legitimately make anypony turn around and leave the shop without a sound), so I had to remake it. Damn it Bons, I know you want to be alone with Lyra but that's going too far!

I work the graveyard shift, and I find I just call when I got up "morning," even though it was eight in the evening, and say good night at eleven in the morning. Although at first, it can be a bit of a mind twister.

Dunno if summer break is canon in Equestria though, can't recall if it ever occurred in the show (unless it was in the last dozens of episodes that I haven't watch yet).

I doubt it's a thing in Equestria. After being forced to take a political thinking type class for my computer science degree, I know that summer vacation is super bad for making learning happen. Ideally, it should be replaced with the last 3-5 school days of each month being only mandatory for students who are falling behind in the material. This encourages teachers to teach better and students to student better so they can both get more time off, and gives students who fall behind because of family matters or illness or whatever time to catch up. Besides, after the first couple of weeks, summer break gets kinda boring because we aren't doing anything which makes the whole experience generally unsatisfying.

Well, if nothing else Ponyville is a rural farming community, where a summer break is usually desirable so the kids can help their parents tend the crops and do other necessary chores.
Also, we do know that Babs Seed's visit lasted for a whole week around the Summer Harvest Festival, further suggesting the existence of a summer break.

True, but as a rule ponies and Equestria seem to be mostly like our own world (specifically US culture, where the show is marketed first and foremost), except where explicitly mentioned otherwise. So Summer breaks from school would seem more likely than not.
