Please remember Britain was rather flagrantly violating American neutrality and behaving rather poorly to the United States in the period. (It did not help there was so many British acting as Americans to get away from the Napoleonic Wars and the deserters from the Royal Navy on American vessels.)
This coupled with economic damage to the US from the Napoleonic Wars (American ships was force to dock in the UK and pay a tax before doing business with the rest of Europe.) and the perception Britain was aiding and abetting the Native tribes made Washington cast a sour glance in London's direction. (Which from 1783 until 1815 the British provided support and alliance to Native American tribes, killing American setters, in hopes of creating client states in US territory. That is actual aggression.)
Coupled with the government in London doing very little to quell American ire until the proverbial last minute.
The US was not without grievances leading up to the war. Not to say there was no way a diplomatic solution could have been found, but we have to acknowledge the US had a bit of a point in being irked with London by this time.
Heck, Canada was only ever of secondary or even tertiary importance behind defending the nation's honor by the Warhawks and secured the waterways and lands surrounding the Mississippi River. Once this was done, the USA's position became virtually unassailable.

I never said the US was without its grievances lol. Me personally when I look at the 1812 world map, the Natives and the British have much graver problems more worthy of fighting for. As opposed to the US who was pretty much just romping westward now that the British had no power to stop them and screwing over the Natives once again

The War of 1812 was really the last effort by the UK to prevent America from gaining access to these lands, the Mississippi and the lands surrounding it that they needed to become the superpower the USA is today.
It was mostly a native effort by this point, but the British were clearly involved, and securing a victory in the West more than made up for any sort of defeat in taking Canada. This can be seen by the overwhelmingly positive reaction to the war outside of New England; not only was the U.S a power that fought for its rights, but it was now a power that was essentially safe from foreign invasion.
Heck, take away the War of 1812, and you would be seeing the USA kick Spain's ass into next week. The US wanted Florida and to ensure it ownership of New Orleans, as Spain was losing its empire quickly at that point (and that has nothing to do with the War of 1812). Add in Texas being highly desirable and also California as even before gold there were the sea lion pelts that were worth their weight in gold in the China trade, plus California was (before population and smog made it less so) practically paradise by 19th Century standards. Toss in Manifest Destiny and Spain is looking at problems with the US very quickly.

Although to be fair, Spain did have its fair share of conflicts with the US over the decades XD Not to mention all the new Hispanic nations that had gained their independence around that same time.

To me at least, Connor's story in AC3 was kinda all about him learning that he can't just be loyal to one country based on their rhetoric because they'll never be able to uphold it 100% of the time. The British during 1812 were much more likely to advocate for the Native Americans than the Americans, who had men like Andrew Jackson running around drunk on power. That's my reasoning for having the Assassins switch sides between the Revolution and 1812 at least
