Have I ever mentioned that I love making tutorials? and I'm accepting requests!

Tutorial divided en three so you can see them in blocks and not an unit, you can use any part of the tutorial at your best convenience:

You can use the dough to make any kind of pasta (ravioli, lasagna, spaghetti, etc)
You can fill the raviolis with anything you fancy, or use the filling as a healthy dip.
The same technique to prepare and assemble the pasta can be used for almost any kind of pasta!

oooh I didn't know what spanakopita was, I had to google it, but it does sounds similar xD I would recommend a cheese with a nice flavor, I use a delicious riccota that is a bit salty, that adds a nice touch to the filling and needs little extra seasoning

funny because first thing i thought was "what kind of ricotta?"...
and "eww onion in the filling" LOL... my mum uses only ricotta and spinach... so it felt weird

try them with cheese and potatoes...! it's kinda the best ahahaha or maybe it's just me...

A really nice Italian guy I met told me that you guys don't eat as much garlic and onions as we do yet, every Italian restaurant serves everything with lots of onion and garlic, so we tend to believe that that's the distinctive flavor of Italian food. I think that's very weird!

I would love to try it with cheese and potatoes! Do you mash the potatoes and fill the ravioli with it?

ehehe he garlic and onion thing...it's funny tho... lot's of people i know don't like them both... or just don't like one...
we think we don't use it much... but for example in my house almost every dish has both garlic and onion... so is not the distinctive flavor but surely is almost everywhere... is more like an additional flavour...a very important one !
i can look for the recipe if you want...
basically they have mashed potatoes (just boiled and mashed with a fork..not the thing you can buy ready) cheese...pecorino cheese... but maybe just a good strong-seasoned cheese can do... some mint leaves...olive oil or lard... and of course garlic and salt... you can also use onion inside... it's maybe hard to do... it depends on the region... we have those [link] normal other people in italy maybe have [link]

Beautiful! The recipe sounds great, I can already taste it Oh I will surely make them next time I make ravioli. I would also love it if you made a tutorial! And I know it would be very popular

it's ok... and thanks i'm happy you like them... i wanted to try another one...but then i think nobody would be interested in those recipes so... in other cases i think those recipes are already out there so nobody would need them... >.< i'm waiting to have something interesting to share...

In my experience, there's always someone interested in every recipe. I thought that the French toasts were too common and uninteresting, but it turned out that a lot of people liked that tutorial! So if you have an idea in mind, I would say go for it! You never know.

xD Ricotta cheese is my best friend. It makes yummy dinner foods like this ravioli (which I should totally try this recipe sometime), and then you can use it to make desserts! Like these yummy cookies my aunt makes....hm....and cossata cake.

Oh yes, I love ricotta so much too! But I've never tried any desserts with it, you just gave me a wonderful idea I just found the recipe for the cassata cake, it sounds so sinful!

Oh yes, cassata cake is quite sinful. It's a layer cake and every layer is filled with (basically) cannoli filling.

However, cassata cakes take forever to cook, as well. DX My stupid ancestry enjoys taking forever just to cook yummy foods.

Yeah, that is lucky. I have a grocery store that's about an hour's walk from my house (not far at all, I like the walk. XD), but it's small and doesn't have a lot of stuff....

To be honest I'm a vegetarian and I don't cook with meat, but I asked my boyfriend (a big meat lover) and he said that bolognese is the best meat filling for raviolis just drain it so it's not too liquid.

If you meant to use this same recipe but add meat, then I would try pancetta or jamón serrano. But if you can't find them, I'm sure that if you fry and cut a bit of bacon it will be a great meaty addition just mix it with the filling.

Actually I think I'll try that next time for my boyfriend, I'm sure he'll like it

I'm almost sure that it'll work Good thing you asked, I've been thinking about it and I'm confident that it will taste good too! If you're not allergic to them, I would recommend you adding some pine nuts to the filling to compensate They're great in this recipe! But a little hard to find sometimes...

I didn't know people could be allergic to onions and garlic then I assume you must be allergic to shallots too?

Too bad you're allergic to shallots, I was gonna suggest to use them to substitute the onion and garlic well no problem, I'm sure it will turn out ok

Pine nuts are small and they aren't hard, so just apply them as is.
