It depends on the picture. If I'm using watercolor, I usually use a light tan brown for skin and mix in a little orange. I paint that, then for the shadows I use a brown with red mixed in. For the darkest shadows I usually use a brown mixed with blue or purple.
In this tutorial I just used the light tan mixed with orange, and used the mixture of red and brown for the shadows.

You can also paint with watered down acrylic paint to make it look like watercolor if you have those.

yeah... but there's a lot more to your shading that you've explained in words. I can see that you think about the shadows in every single layer and that you really understand your watercolors and how they put down.
